Recipe for Vanilla Ice Cream

Ingredients:

1. 1036 g milk

2. 100 g Madagascan Vanilla Sugar

3. 160 g caster sugar

4. 100 g atomised glucose

5. 160 g egg yolks 

6. 300 g fresh cream (35% fat)

7. 8 g stabiliser

Preparation:

1. Mix the Madagascan Vanilla Sugar, caster sugar, atomised glucose and stabiliser.

2. Pour over the egg yolks and blend

3. Heat the cream & milk and add the mixture prepared above.

4. Bake at 85°C like a custard

5. Cool rapidly & mature at 5°C.

6. Churn the ice cream and place in freezer.

6. Glaze the tart.
