Recipe for Pastry Cream Filling

(for Vanilla or Vanilla/Raspberry Éclairs)

Ingredients:

1.500 g whole milk

2. 40 g Madagascan Vanilla Sugar

3. 90 g caster sugar

4. 100 g egg yolks

5. 40 g cornstarch

6. 30 g butter

Preparation:

1. Boil the milk.

2. beat the egg yolks with the caster sugar, Madagascan Vanilla Sugar & the cornstarch until the mixture is smooth.

3. Add half the boiling milk to the blended mixture, stir and pour into the pot with the remaining milk, then bring to a boil again while continuing to stir with a whisk. Make sure you stir the bottom of the pot so that the cream does not stick to it.

4. Once boiled, cook for 4 minutes. Remove from the heat, add the butter , smoothen with a whisk and store under cling film in the refrigerator.
