Recipe for Madeleine Batter

(Ideal for Vanilla Madeleines or Blueberry Muffins)

Ingredients:

1. 315 g Caster Sugar

2. 85 g Madagascan Vanilla Sugar

3. 440 g flour

4. 16 g baking powder

5. 500 g Eggs

6. 360 g butter

Preparation:

1. Combine the powdered ingredients together ( flour, caster sugar, Madagascan Vanilla Sugar, baking powder) in a mixing bowl.

2. Mix at medium speed. Add the eggs, then the melted butter to give the Madeleine batter its specific taste.
