1. 100 g egg whites
2. 30 g Madagascan Vanilla Sugar
3. 220 g caster sugar
4. 10 g icing sugar
Preparation:
1. Beat the egg whites until stiff with an electric beater at medium speed for 2 minutes.
2, When the whites start to rise, pour the caster sugar in gently. Beat until the egg whites become very firm.
3. Add the Madagascan Vanilla Sugar with a spatula. Place the meringues on a sheet that has been slightly greased and sprinkle icing sugar on top.
4. Bake at a very low temperature in the oven (max: 90° C) for 2 to 3 hours making sure that they do not brown.
