Syrup Ingredients:
1. 280 g water
2. 15 g Madagascan Vanilla Sugar
3. 70 g brown or caster sugar
4. 1 cinnamon stick
5. Zest of 1/2 lemon
6. Juice of a lemon
7. 1 star anise
8. 3-5 peppercorns
Fruits:
1. 1 mango
2. 3 bananas
3. 1 pomegranate
4. 200 g white grapes
5. 2 passion fruits
Preparation:
1. Pour the water, brown/caster sugar and Madagascan Vanilla Sugar into a pot. Add the zest, lemon juice, cinnamon, star anise and black peppercorns. Boil, then simmer for 15 minutes. Cool & store this Spicy Vanilla Syrup in a cool place.
2. Peel the mango, cut in two on the length of the pit. Remove the pit and cut the flesh into cubes. Place in a large bowl.
3. Add the bananas cut in slices and the grapes cut in two.
4. Cut the pomegranate in two, remove the skin and all the seeds. Add to the other fruit.
5. Cut the passion fruit in two, remove the seeds and pulp and add to the fruit.
6. Serve the fruit salad in bowls and add 2 to 3 tablespoons of the spicy vanilla syrup, which should be filtered first.
